CRUMBLE TOPPED MINCE PIES

INGREDIENTS

MINCE PIE MIX – MAKES 12
200G TREX
400G PLAIN FLOUR
DROP OF MILK
1 JAR OF MINCE MEAT FILLING (I LOVE ROBERTSON)

TOPPING
50G BUTTER
50G PLAIN FLOUR
50G CASTER SUGAR
DROP OF MILK
SPRINKLE OF LIGHT BROWN SUGAR (OPTIONAL)

RECIPE

  1. HEAT OVEN TO 170° FAN
    GREASE A MUFFIN/CUPCAKE TRAY USING TREX (JUST LIGHTLY)
  2. MIX THE REMAINING TREX WITH 400G PLAIN FLOUR
    THEN SLOWLY ADD MILK TO THE MIX TILL IT FORMS INTO A DOUGH (DO THIS VERY SLOWLY AS YOU DON’T NEED MUCH

  3. ROLL OUT THE DOUGH ON A FLOURED SURFACE AND USING COOKIE CUTTERS CUT 12 SHAPES OUT AND ADD THEM TO THE TRAY
  4. FILL THE PASTRY CUPS WITH MINCEMEAT
  5. NOW MAKE THE CRUMBLE TOPPING. MIX BUTTER,PLAIN FLOUR AND CASTER SUGAR AND A SPLASH OF MILK. YOU SHOULD HAVE A BREADCRUMB TEXTURE – IF YOU DON’T HAVE ANY CRUMBS YOU CAN ADD A DROP MORE MILK, BUT IF YOU ADD TOO MUCH IT WILL BECOME A DOUGH SO A DROP AT A TIME.
    SPRINKLE THE CRUMB TOPPING OVER THE TOP OF THE PIES. I LIKE TO ADD A SPRINKLE OF LIGHT BROWN SUGAR OVER THE TOP FOR MORE SWEETNESS

  6. ANY LEFTOVER PASTRY CAN BE USED TO MAKE CHRISTMAS SHAPES FOR THE TOP.
    BAKE FOR 20-25 MINUTES TILL TURNING GOLDEN BROWN
