CREAMY TOMATO + OREGANO CHICKEN DISH

A COMFORTING AND FLAVOUR PACKED CHICKEN DISH THAT IS SO EASY TO MAKE AND CAN BE ENJOYED ALONGSIDE VEGGIES OR PASTA TO SUIT ALL THE FAMILY

INGREDIENTS

SERVES 2 ADULTS – DOUBLE UP FOR A FAMILY MEAL
2 CHICKEN BREASTS
150ML DOUBLE CREAM
1 CHICKEN STOCK CUBE
200ML HOT WATER
2 TEASPOONS DRIED OREGANO
1 TEASPOON PAPRIKA
1 TEASPOON GARLIC PASTE (OR 1 CLOVE OF GARLIC)
PLAIN FLOUR OR CORNFLOUR
100G SUN DRIED TOMATO PASTE
50G PARMESAN CHEESE (PARMIGIANO REGGIANO OR SIMILAR)


SERVE WITH EITHER PASTA SHELLS OR LONG STEM BROCCOLI AND MINI ROAST POTATOES (BUT REALLY IT GOES NICE WITH ANYTHING)

RECIPE

  1. CUT UP YOUR CHICKEN INTO STRIPS AND COAT THEM WITH EITHER PLAIN FLOUR OR CORNFLOUR. ADD THEM TO A FRYING PAN WITH A DROP OF OIL AND BROWN THE CHICKEN ON A LOW HEAT.
  2. AFTER 5 MINUTES PUSH THE CHICKEN TO ONE SIDE OF THE PAN. ADD IN SUN DRIED TOMATO PASTE, GARLIC, PAPRIKA, OREGANO AND MIX QUICKLY
  3. SOON AFTER ADD IN THE DOUBLE CREAM, HOT WATER AND THE STOCK CUBE AND MIX WELL. LEAVE THE SAUCE TO SIMMER ON A LOW HEAT FOR 5 MINUTES
  4. ADD IN THE CHEESE AND MIX. THE SAUCE SHOULD THICKEN UP AS IT REDUCES BUT IF NOT YOU CAN ADD SOME CORNFLOUR IF NEEDED
  5. ONCE THE CHICKEN IS COOKED THROUGH, IT’S READY TO SERVE
  6. WE HAVE IT WITH PASTA SHELLS SOME NIGHTS,OTHER NIGHTS LONG STEM BROCCOLI AND MINI ROAST POTATOES OR EVEN RICE. WHICHEVER YOU PREFER!
