WHEN THE SUN IS SHINING AND A FEEL OF SPRING IS IN THE AIR, I DO LOVE A HOT CROSS BUN. SO EASY TO MAKE TOO!
I LOVE MINE SMOTHERED WITH BUTTER AND JAM.



INGREDIENTS
MAKES 6 BUNS
100G RAISINS
1 EGG
110ML MILK
25G BUTTER
250G STRONG BREAD FLOUR
35G CASTER SUGAR
4G DRIED YEAST
PINCH OF SALT
1/2 TEASPOON DRIED GINGER
1/2 TEASPOON NUTMEG
1/2 TEASPOON CINNAMON
HALF ORANGE ZEST
PLUS 40G FLOUR
STRAWBERRY JAM FOR TOPPING
RECIPE
FIRST
HEAT THE MILK IN A PAN UNTIL IT STARTS TO STEAM
WHILE THE MILK IS WARMING…
IN A BOWL MIX THE SUGAR, CINNAMON, NUTMEG, GINGER, SALT,YEAST,ORANGE ZEST AND FLOUR
THEN
ADD IN THE BUTTER AND RUB THE MIXTURE TO FORM A BREADCRUMB LIKE TEXTURE
NOW ADD
THE EGG, RAISINS AND MILK AND MIX IT TOGETHER (IT MAY BE A BIT STICKY)
TIP IT OUT ONTO A LIGHTLY FLOURED SURFACE
KNEAD THE DOUGH FOR A FEW MINUTES UNTIL IS BECOMES A BIT SMOOTHER AND LESS STICKY. ADD A SPRINKLE MORE FLOUR IF IT SEEMS TOO STICKY!
NOW
LIGHTLY GREASE A BOWL WITH A BIT OF OIL AND POP THE DOUGH IN AND COVER WITH CLINGFILM. LEAVE THE DOUGH TO RISE FOR 1-2 HOURS UNTIL DOUBLE IN SIZE
ONCE THE DOUGH HAS DOUBLED
LIGHTLY FLOUR A SURFACE AND TIP OUT THE DOUGH. CUT THE DOUGH INTO 6 PIECES AND CAREFULLY ROLL THEM INTO BALL SHAPES
PLACE THEM ONTO A TRAY LINED WITH BAKING PAPER
SPACE THEM CLOSE TO EACH OTHER BUT NOT TOUCHING
OIL A PIECE OF CLINGFILM LIGHTLY SO IT DOESN’T STICK AND COVER THE BUNS. LEAVE THEM TO RISE FOR A FURTHER 45 MINUTES
30 MINUTES INTO THE 2ND RISE, PREHEAT THE OVEN TO 180°C FAN
JUST BEFORE THE BUNS GO INTO THE OVEN YOU WANT TO ADD THE ALL IMPORTANT CROSSES. MIX 40G FLOUR WITH 40ML OF WATER TO MAKE A MIXTURE. IT NEEDS TO BE RUNNY ENOUGH TO PIPE BUT THICK ENOUGH IT WON’T RUN. USE A PIPING BAG TO ADD THE CROSSES TO THE BUNS. (IF YOU DON’T HAVE A PIPING BAG USE A CORNER OF A ZIPLOCK BAG)
BAKE IN THE OVEN FOR 20 MINUTES ON 180°C. MY OVEN BAKES QUICK SO I TURNED MINE DOWN TO 170°C AFTER 10 MINUTES SO THEY DIDN’T BURN!
WHILE THEY ARE COOKING PREPARE THE GLAZE TO MAKE THE BUNS NICE AND SHINY
TAKE A LARGE SPOONFUL OF JAM AND HEAT IT UP IN THE MICROWAVE FOR 10 SECONDS ADD A FEW DROPS OF HOT WATER SO IT BECOMES MORE RUNNY. ONCE THE BUNS COME OUT THE OVEN, BRUSH ON THE GLAZE ALL OVER THE BUNS.
ALLOW THEM TO COOL AND ENJOY
