I HAVE BEEN MAKING THIS RECIPE FOR 15 YEARS AND I AM NOT A HUGE QUICHE LOVER BUT THIS QUICHE I LOVE!!
IT’S SUPER EASY TO MAKE AND TASTES SO GOOD AND DOES MORE THAN ONE NIGHTS MEAL!
SERVE WITH SALAD, COUS COUS AND POTATOES FOR A PERFECT SUMMER DISH



INGREDIENTS
250G CHERRY TOMATOES
300ML DOUBLE CREAM
HANDFUL FRESH BASIL LEAVES
PINCH OF SALT AND PEPPER
1 EGG
100G CHEDDAR CHEESE
DRIZZLE OF OLIVE OIL
SHORTCRUST PASTRY – 300G PLAIN FLOUR, 125G BUTTER – DASH OF MILK
YOU WILL NEED A QUICHE/FLAN/PIE DISH
RECIPE
PREHEAT THE OVEN TO 170°
FIRST MAKE YOUR SHORTCRUST PASTRY
IN A BOWL, ADD FLOUR AND BUTTER AND RUB WITH YOUR FINGERS TO FORM BREADCRUMB LIKE TEXTURE. THEN SLOWLY ADD IN A FEW TABLESPOONS OF MILK AND KEEP MIXING TO FORM A DOUGH – ADD THE MILK SLOWLY SO IT DOESN’T BECOME TOO WET!
THEN
ON A FLOURED SURFACE, ROLL OUT THE DOUGH INTO A LARGE CIRCLE TO FIT INSIDE YOUR QUICHE DISH AND TRIM ANY ACCESS OVER THE EDGES.
PLACE THE PASTRY INTO THE OVEN TO BLIND BAKE FOR 5-10 MINUTES (YOU WANT TO SLIGHTLY BAKE THE PASTRY SO IT DOESN’T GET A SOGGY BOTTOM- SO JUST LONG ENOUGH THAT IT STARTS TO BECOME BAKED RATHER THAN SOFT DOUGH. REMOVE AND SET ASIDE
NOW
CUT YOUR TOMATOES INTO HALVES AND PLACE THEM ON A LINED BAKING TRAY AND DRIZZLE OVER SOME OLIVE OIL AND SPRINKLE WITH SALT AND PEPPER – COOK THEM IN THE OVEN FOR APPROX 20 MINUTES
WHILE THEY ARE COOKING
ADD TO A BOWL, DOUBLE CREAM, 1 EGG AND CHOPPED UP BASIL AND MIX WITH A FORK. ALSO GRATE YOUR CHEESE AND SET ASIDE.
NOW
SPRINKLE A QUARTER OF THE CHEESE ONTO THE QUICHE BASE.
REMOVE THE TOMATOES FROM THE OVEN AND ADD THEM ONTO THE PASTRY AND SPREAD EVENLY ON THE BASE
THEN
POUR THE BOWL INTO THE DISH AND THEN SPRINKLE THE REMAINING CHEESE OVER THE TOP
COOK IN THE OVEN FOR 30-40 MINUTES
AFTER 15 MINUTES YOU WILL SEE THE QUICHE BECOMING MORE SOLID AND IT MAY START TO BURN ON THE EDGES. COVER WITH TINFOIL TO STOP THE CRUST FROM BURNING!!
FOR A EVEN MORE NICER BAKED QUICHE…I LIKE TO COOK MINE FOR 30 MINUTES THEN REMOVE AND ALLOW TO COOL AND THEN LATER THAN DAY REHEAT IT FOR 20-25 MINUTES. IT TASTES SO MUCH BETTER AFTER A SECOND BAKE OR EVEN THE DAY AFTER! – NO SOGGY BOTTOMS HERE!!
