INGREDIENTS
500g STRONG BREAD FLOUR
350ML LUKEWARM WATER
7G SEA SALT
7G DRIED ACTIVE YEAST
SPLASH OF MILK (OPTIONAL)
RECIPE
FIRSTLY
MEASURE OUT 350ML LUKEWARM WATER IN A JUG AND ADD IN 7G DRIED ACTIVE YEAST AND MIX WELL UNTIL FROTHY. NOW TIP THAT INTO A BOWL
NOW
ADD IN 500G STRONG BREAD FLOUR AND SALT AND MIX WELL TO FORM A ROUGH DOUGH THEN COVER WITH A TEA TOWEL AND ALLOW TO REST FOR 30 MINUTES
THEN
ONCE 30 MINUTES IS UP YOU WANT TO PERFORM SOME STRETCH AND FOLDS WITH THE DOUGH SO WET YOU HANDS IN SOME WATER AND LIFT ONE SIDE OF THE DOUGH UP TO STRETCH AND THEN RELEASE INTO THE MIDDLE. THEN TURN THE BOWL AND REPEAT. YOU WANT TO DO THIS 4 TIMES
NOW
COVER THE BOWL AGAIN AND LEAVE TO PROVE FOR 2 HOURS UNTIL DOUBLE IN SIZE.
NOW THE 2 HOURS IS UP
PREHEAT THE OVEN TO 200° (FAN) AND LINE A BAKING TRAY WITH BAKING PAPER
THEN
DUST A WORKTOP WITH FLOUR AND TIP OUT THE DOUGH AND SPRINKLE OVER LIGHTLY WITH FLOUR. CUT THE DOUGH INTO 8
NOW
PINCH THE DOUGH TOGETHER BY FOLDING FROM THE OUTSIDE EDGE INTO THE MIDDLE, FLIP OVER AND MOULD WITH YOUR HANDS INTO A ROUGH BALL SHAPE AND ADD TO THE BAKING TRAY. REPEAT FOR ALL 8 ROLLS PLACING THEM SLIGHTLY APART ON THE TRAY TO ALLOW FOR RISING. COVER AND LEAVE TO REST FOR 30 MINUTES WHILST THE OVEN IS HEATING.
IF YOU WOULD LIKE YOUR ROLLS A BIT MORE CRUSTY THEN JUST BEFORE THEY GO IN THE OVEN BRUSH OVER WITH A SPLASH OF MILK
THEN
BOIL SOME WATER AND POUR INTO AN OVENPROOF DISH AND PLACE ON THE BOTTOM OF THE OVEN. ADD THE TRAY TO THE MIDDLE OF THE OVEN AND BAKE FOR 10 MINUTES. AFTER 10 MINUTES REMOVE THE DISH WITH THE BOILING WATER AND BAKE FOR A FURTHER 10-15 MINUTES UNTIL LIGHTLY GOLDEN! ALLOW TO COOL FULLY AND IF FREEZING KEEP THEM IN A AIRTIGHT CONTAINER
