A VERY EASY CHICKEN CURRY THATS FULL OF FLAVOUR AND SO EASY TO MAKE!



INGREDIENTS
HALF CHICKEN – (LEFTOVER FROM THE CHICKEN SOUP RECIPE)
1 ONION
3 GARLIC CLOVES
180G JAR TIKKA PASTE
2 TINS OF PLUM TOMATOES
500G RICE
SALT AND PEPPER
2 X NAAN BREADS
DOLLOP OF CREME FRAICHE
RECIPE
THIS RECIPE IS BASED ON LEFTOVER CHICKEN – IF YOU HAVE FOLLOWED MY CHICKEN SOUP RECIPE YOU SHOULD HAVE HALF A CHICKEN LEFTOVER FOR THIS DISH
CHOP UP THE ONION AND GARLIC FINELY.
IN A PAN OF BOILING WATER PUT ON THE RICE TO COOK
IN A FRYING PAN ADD A DROP OF OLIVE OIL AND COOK THE ONIONS UNTIL SOFT. THEN ADD IN THE GARLIC AND COOK FOR 2 MORE MINUTES.
NOW ADD IN THE JAR OF TIKKA PASTE AND COOK FOR 1 MINUTE
THEN ADD IN 2 TINS OF PLUM TOMATOES ALONG WITH A SPRINKLE OF SALT AND PEPPER. ADD IN THE LEFTOVER CHICKEN AND SIMMER FOR 10 MINUTES.
ADD A LARGE DOLLOP OF CREME FRAICHE TO FINISH BEFORE SERVING WITH RICE AND NAAN BREADS.

YOU CAN ALSO MAKE THIS AT THE WEEKEND AND FREEZE FOR A QUICK GO TO MEAL IN THE WEEK! JUST REMEMBER TO TAKE IT OUT TO DEFROST IN THE MORNING AND REHEAT UNTIL THE CHICKEN IS COOKED.
