A TRADITIONAL CHRISTMAS CAKE RECIPE WITH ALL THE FESTIVE FLAVOURS
REALLY EASY TO MAKE AND SO DELICIOUS TO EAT
MY MOTHER IN LAW IS MRS CHRISTMAS AND WE ALL LOVE HER CHRISTMAS PUDDING AND CHRISTMAS CAKE THAT SHE HAS BEEN MAKING FOR MANY YEARS – INFACT I NEVER LIKED CHRISTMAS PUDDING AND CHRISTMAS CAKE UNTIL I TRIED HERS AND NOW ITS A CHRISTMAS STAPLE!! THE LAST FEW YEARS I’VE BEEN MAKING BOTH OF THEM SO THAT I CAN CONTINUE TO KEEP THIS FAMILY TRADITION ALIVE! MY LITTLE BOY PERCY LOVES ‘GRANDMA’S CHRISTMAS CAKE’



INGREDIENTS
300G SULTANAS
80G GLACE CHERRIES – CUT INTO QUARTERS
400G CURRANTS
70G GROUND ALMOND
230G PLAIN FLOUR
1.5 TEASPOON MIXED SPICE
1.5 TEASPOON CINNAMON
185G SOFT BUTTER
113G LIGHT BROWN SUGAR
3 EGGS
HALF A LEMON – JUICED
BRANDY FOR FEEDING
MARZIPAN AND WHITE FONDANT ICING FOR DECORATING
RECIPE
PREHEAT THE OVEN TO 120°(FAN)
LINE A 8 INCH TIN WITH BAKING PAPER (OR A LONGER TIN WILL WORK TOO)
IN A LARGE MIXING BOWL ADD IN THE BUTTER AND SUGAR AND MIX TOGETHER – MAKE SURE THE BUTTER IS REALLY SOFT SO THAT IT IS EASY TO WORK WITH
ADD IN THE EGGS AND MIX. AT THIS POINT IT MIGHT BE A BIT SLOPPY BUT STICK WITH IT!
ADD IN THE CHERRIES, CURRANTS AND SULTANAS AND MIX
NOW ADD IN THE MIXED SPICE, CINNAMON AND GROUND ALMOND AND MIX
THEN ADD IN THE FLOUR AND THE LEMON JUICE
MIX IT REALLY WELL TO MAKE SURE EVERYTHING IS COVERED
TIP OUT THE MIX INTO THE BAKING TIN AND SQUASH DOWN WITH THE BACK OF A SPOON OR SPATULA
COVER THE MIX WITH A PIECE OF BAKING PAPER AND ADD FOIL OVER THE TOP OF THE TIN
BAKE IN THE OVEN ON 120°(FAN) FOR 3 HOURS
NOW THAT’S THE CAKE MADE!!!
LEAVE IT COOL COMPLETELY, WASH AND DRY THE BAKING TIN AND RELINE IT WITH BAKING PAPER AND ADD THE CAKE BACK INTO THE TIN. DRIZZLE OVER 3 TABLESPOONS OF BRANDY. COVER THE CAKE WITH BAKING PAPER AND THEN WRAP IT ALL IN FOIL TO KEEP IT WELL SEALED.
KEEP THE CAKE IN A CUPBOARD AND FEED IT ONCE A WEEK UPTO CHRISTMAS. (3-4 TABLESPOONS OF BRANDY EACH WEEK)
THE WEEK BEFORE CHRISTMAS, IT’S TIME TO DECORATE!!
CAREFULLY TAKE THE CAKE OUT OF THE TIN AND PAPER AND PLACE IT ON THE CAKE STAND OR BOARD YOU ARE GOING TO PRESENT IT ON AT CHRISTMAS.
ROLL OUT THINLY THE MARZIPAN AND COVER THE TOP AND SIDES – CUT OFF ANY EXCESS
NOW ROLL OUT THE ICING TO COVER THE CAKE AND PLACE THAT OVER THE TOP OF THE MARZIPAN – CUT OFF ANY EXCESS
